Ingredients:

  • Basic Dough
  • 100g white sugar
  • 275 g honey +
  • 1 1/4 cup (125cc) water
  • 350g flour *
  • 1/4 to 1/2 teaspoon salt
  • 50 grams of brown sugar
  • 15 grams baking powder
  • spice mixture ( all in powder form)
  • 1 teaspoon cardamom
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon aniseed
  • 1/8 teaspoon coriander
  • oil or milk for top of dough
  • Variations
  • Replace 75 grams of honey 40 grams soft butter, plus 75 grams of chopped stem ginger, hazelnuts or raisins.
  • *This can be made with rye, buckwheat or white flour.
  • +Honey flavors can be clover, wildflower, buckwheat.

Honey Cake, HoningKoek in Dutch, is not as sweet as it sounds. It is an easy to make cake that uses honey to mellow the powerful spice mix.

Honingkoek is a type of Ontbijtkoek, or breakfast cake. If savory pepper is the main flavor it is a peperkoek. If ginger, it is a gemberkoek. A kandijkoek is topped with pearl sugar. And if honey is the main flavor, it is a honingkoek.

You can leave out a spice you dont like, substitute one for another, or add a new flavor to the bouquet.

  • Preparation
  • Mix flour with spices, baking powder, sugar and salt. Put white sugar and honey with water in a large pan and bring all to the boil. Mix the flour with the honey liquor, and make a dough using a mixer with dough hooks. Dough may be hot so you must let it cool before using your hands. After dough is evenly mixed, knead for 5-7 minutes.
  • Line a cake tin or loaf pan with baking parchment and put the dough in it. The dough is very firm, beginning with spoonfuls of dough in the corners and fill out the form so on until the dough runs out. Smooth the top with the back of a wet spoon.
  • Traditionally it is covered with plastic wrap and left rest for at least twelve hours at room temperature or the refrigerator. You can make it right away if you cant resist without much sacrifice to taste or texture if you just cant resist after smelling the batter!
  • Baking Instructions
  • Preheat the oven to 340F or 170C. Remove foil and brush the top of the dough with any oil or milk. Bake in the middle of the oven for 60 minutes. Be sure to look after 45 minutes how the cake looks. Not every oven is the same. You can also opt for an even lower temperature 325F with a slightly longer cooking time (70 to 90 minutes). Let the cake cool on a wire rack.
